Our Ingredients -What we use, and where it comes from.

I've always valued understanding where my food comes from, I've gone to great lengths to learn how things are grown, made, and processed. I feel it is important for everyone to know where their food comes from - but it shouldn't be so hard!

This is why I've created this post, it will detail every ingredient we use, where we use it, and where it comes from. Being a small bakery, things do change from time to time, so I'll periodically create an updated post with the most recent information.

So, let's start with the big one....

Flour
Baker's Flour - a sifted wheat flour that is the basis for many bread recipes.

  • We use Wholegrain Milling Premium Organic Baker's Flour which is milled in Gunnedah NSW, with organic grain sourced from across eastern Australia..

  • Our Baker's Flour appears in all of our products.


Wholewheat Wheat Flour

  • We use Woodstock Spitfire Wholewheat Flour which is milled by Courtney & Ian, and grown by their family in Berrigan, NSW.

  • We use Spitfire Wholewheat Flour in our White Tinned Loaf, Country Whey Loaf, Spitfire Crumpets.


Rye Flour

  • We mill all of our rye grain fresh within 24hrs of mixing the dough to ensure the most flavour and nutrients make it into the bread.

  • We source our rye grain from Burrum Biodynamics which is grown and processed by Tania & Steve in Marnoo, VIC.

  • We use rye in our sourdough starter, which is used in all of our products, as well as our Rye Tinned Loaf, and our Dark Rye Loaf. We also use softened rye grain in our Burrum Multi-Grain Loaf.


Spelt Flour

  • We mill all of our spelt grain fresh within 24hrs of mixing the dough to ensure the most flavour and nutrients make it into the bread.

  • We source our spelt grain from Burrum Biodynamics which is grown and processed by Tania & Steve in Marnoo, VIC.

  • We use freshly milled spelt flour in out Spelt Tinned Loaf. We also use softened spelt grain in our Burrum Multi-Grain Loaf.


Dairy
Whey - a byproduct from the cheesemaking process, whey is an incredibly tasty and nutritious ingredient.

  • We use sweet goat whey from Dreaming Goat Dairy. Sarah & Daniel run the dairy from their farm in Monegeeta, VIC.

  • Whey is used in our Country Whey Loaf.


Yoghurt

  • We use Shulz Organic Yoghurt from Shulz Organic Dairy in Timboon, VIC.

  • Yoghurt is used in our Sweet Buns and our Scrolls.


Other Ingredients
Sugar - being a small producer, we are subject to using the best we can get, so depending on what's available, we either use organic sugar from Brazil, or normal white sugar from CSR. Australia does not produce organic sugar.
Sugar is used in our Sweet Buns and our Scrolls.

Dried Fruit - our dried fruit comes from the Riverina region in NSW and is sourced from various growers, mostly from BD Lewis.
Dried Fruit is used in our Sweet Buns.

Chocolate - we use Fair Trade Callebaut Dark Chocolate from Belgium.
Chocolate is used in our Sweet Buns.

Spices - We use sustainably sourced cinnamon from SE Asia and Sri Lanka, the exact source varies.
Cinnamon is used in our Sweet Buns.
