Our Ingredients

We have spent over a decade building relationships with producers and finding the best local ingredients for our Sourdough Crumpets!

Please note: all our crumpets do contain gluten, and do not contain or eggs (but are produced in a kitchen that sometimes uses them in other products.)

Our crumpets are made with the best natural ingredients, no preservatives or additives. Keep them fresh in the fridge for up to one week from baking, or freeze them for up to three months.

The Producers

Woodstock Flour

We’re proud to use Woodstock Flour for all of the wheat flour in our bakery. Based in Rutherglen, Victoria, Woodstock is a small family-run mill producing stoneground, wholegrain and organic flours from grain grown on their own farm and their family’s farm in Berrigan, NSW.

We use their Sifted Rosella Wheat and Wholegrain Wheat in our crumpets, choosing these flours for their flavour, character and provenance.

Woodstock’s commitment to regenerative and organic farming, careful small-batch milling and looking after the health of the land aligns closely with the way we think about good food - starting with good grain, grown and milled with care.

Warracknabeal Bio-Dynamic

Our spelt flour comes from Damien Maher of Warracknabeal Bio-Dynamic, who grows his spelt grain in Warracknabeal, Victoria, and mills it himself on a handmade mill.

We use his wholegrain spelt flour in our Wholegrain Spelt Sourdough Crumpets, where the flour’s full flavour and character really shine. These crumpets are wonderfully rich and nutty, with a deep wholegrain flavour - in fact, they’re the most wholegrainy of all our crumpets. Made with wholegrain spelt and naturally fermented with sourdough, they’re a beautiful, hearty crumpet that have a passionate following by those in the know.

Collins Honey

In 2024, we made the decision to replace sugar with honey throughout our bakery. For a bakery committed to using local ingredients wherever we can, it made perfect sense - honey is produced here in Victoria, while sugar isn’t - and Collins Honey was an easy choice. A three-generation family business supplying locally sourced honey to the Bendigo community since 1955, Collins Honey is now run by Richard and Sharnelle, who pack, label and distribute their honey themselves and spend plenty of time out in the community, including at local farmers’ markets. We love working with Richard and Sharnelle - they’re great humans who care deeply about food, their customers and their community. Their honey brings a beautiful natural sweetness to our baking, while allowing us to support another local Victorian producer whose values feel very much like our own.

Long Paddock Cheese

Our Whey Crumpets are made with whey from our good friends at Long Paddock Cheese in Castlemaine.

Whey is a by-product of cheesemaking, and while it might otherwise be considered a waste product, we think it’s far too beautiful to waste. In baking, whey works a little like buttermilk, giving our crumpets a lovely tenderness and a delicate, gently tangy flavour.

We’ve been market neighbours with Long Paddock for years, and we’ve loved watching their small-scale, artisan cheesemaking business grow. Their cheeses are made by hand using organic milk from a nearby family-owned farm, with a real commitment to craftsmanship, collaboration and their local community.

They make some of the best cheese around, but just as importantly, Chris, Dom, Gaetan and the Long Paddock team are genuinely great people to work with. We’re very happy to give a little of their whey a second life in our crumpets.

Monsieur Truffe

Our chocolate comes from Melbourne chocolate makers Monsieur Truffe, a home-grown business that began as a one-person operation at Prahran Market and has grown into an artisanal chocolate maker based in Brunswick.

We use their 70% Dark Chocolate in our much-loved Dark Chocolate Filled Sourdough Crumpets, where its rich, deep chocolate flavour makes a wonderfully indulgent filling.

What we love most about Monsieur Truffe, though, is that their values go well beyond making great chocolate. They’re committed to quality ingredients, sustainable sourcing and ethical trade, working with suppliers who support fair treatment of farmers and workers and more transparent, responsible supply chains.

We’re excited to work with another home-grown food business that genuinely lives its ethics - because who makes our ingredients matters just as much as what we make with them.
